Curry Chicken Stir Fry

I absolutely LOVE curry chicken so I’ve been wanting to learn how to make it. While I was at Trader Joes I saw “Thai Yellow Curry” sauce and had to get it. I know, I know…totally cheating, but I couldn’t help it. Once I use the whole bottle, I’ll learn to make the sauce too though.  I got two meals out of this and it was really easy and delicious 🙂

Prep and cooking time: 25 minutes

Fry the chicken in a pan on the stove
Cook baby carrots, cut up mini bell peppers, chopped onion, and tomato with spices
Throw the chicken in with the veggies and pour on some sauce

Sprinkle on cilantro and serve!

 

Mini Tostadas

I adapted a recipe and since I hate reading directions, I just looked at the ingredients and tried to do my own thing with them using what I have. They looked so cute and yummy! The best part was that they were small enough to pick up and eat 🙂 Inside the tostada: cooked ground turkey, re-fried beans, lettuce, grated cheese, sliced other half of tomato, sour cream.
  1. One flour tortilla cut in half
  2. Spray giant muffin pan
  3. Fold tortillas into a cup inside two giant muffin tins
  4. Bake at 375 for about 8 min.

Chile Lime Burger on Sourdough & Artichoke

Chile Lime Burger:
Chile lime burgers (4 in a pack from Trader Joes)
Toasted sourdough bread (cut in half)
Mayo/dijon
Avocado chunks
Tomato

Artichoke:
Artichoke
Parmesan
Olive oil
Garlic chunks
Boil water, then cook artichoke in it for about 40 minutes or until the stem is soft if you stick a fork in it. Spread the leaves open and pour olive oil inside, then sprinkle Parmesan and garlic chunks throughout.

Artichoke dip:
Mix mayo, a little lemon juice, and a small amount of dijon in a small bowl.

Bread:
Pour olive oil on both sides of bread then sprinkle with kosher salt (chunky). Bake bread for 4 minutes and broil for one.

How to Make a Toga Out of a Pillow Case

In college, I loved dressing up for all kinds of themed parties but as broke as I was, I always tried to find a cheaper way to make things, while still being able to go all out.

Luckily, togas are probably the easiest, potentially free costume you can make. You can find everything in your dorm room! Really, all you need is a pillow case – any color works – and some accessories.

  1. Grab a pillow case
  2. Lay it out flat on the floor and make an “arm hole” on left side by cutting straight down the right of the seam about 6 inches.
  3. About 3 inches in from the top left side, make a diagonal cut going downward toward the right side.
  4. This may still be a boxy shape, so you can make another small slit down the seam on the right side. Use these two pieces to tie a knot to pull the toga in for a more fitted look.
  5. Add a belt, a bandeau to wear under your toga, some vines or a gold headband to your hair and you’re set!
