Best Bread Ever: Grilled Ciabatta Bread

Drizzle bread with olive oil on both sides
Crack salt over it
Throw slices on the BBQ
Once it’s a little charred it’s done!

Total prep and cooking time: 10 minutes

Delicious and very easy to make!

Mac N Cheese Taco Salad

I was feeling a little nostalgic about the dorms and the main thing that comes with them–Mac N Cheese. I didn’t want to go the traditional route since I now have a whole kitchen instead of just a microwave, so I started thinking about what I could add to spice it up. I love taco salad, so I figured I may as well try it.

I added the extra avocado chunks and onions to salad with poppyseed dressing. YUM! I wish I would’ve added more spices and hot sauce. Maybe next time I’ll try ground beef or turkey in it as well.

Total cooking and prep time: 30 minutes

  1. Cook one box of mac n cheese (I used shells and white cheddar which I really liked)
  2. Add chopped tomatoes, onions, and avocado
  3. Stir in salsa
  4. Crunch up tortilla chips
  5. Add salt, pepper and hot sauce

Mini Pizzas on English Muffins

I used leftovers from making pizza for these bad boys:

Total cooking and prep time: 15 minutes

  1. 3 English Muffins cut in half
  2. Half with red sauce, half with Dijon
  3. Cheese, pepperoni, and onions

Curry Chicken Stir Fry

I absolutely LOVE curry chicken so I’ve been wanting to learn how to make it. While I was at Trader Joes I saw “Thai Yellow Curry” sauce and had to get it. I know, I know…totally cheating, but I couldn’t help it. Once I use the whole bottle, I’ll learn to make the sauce too though.  I got two meals out of this and it was really easy and delicious 🙂

Prep and cooking time: 25 minutes

Fry the chicken in a pan on the stove
Cook baby carrots, cut up mini bell peppers, chopped onion, and tomato with spices
Throw the chicken in with the veggies and pour on some sauce

Sprinkle on cilantro and serve!

 

Mini Tostadas

I adapted a recipe and since I hate reading directions, I just looked at the ingredients and tried to do my own thing with them using what I have. They looked so cute and yummy! The best part was that they were small enough to pick up and eat 🙂 Inside the tostada: cooked ground turkey, re-fried beans, lettuce, grated cheese, sliced other half of tomato, sour cream.
  1. One flour tortilla cut in half
  2. Spray giant muffin pan
  3. Fold tortillas into a cup inside two giant muffin tins
  4. Bake at 375 for about 8 min.
