Easy Tortilla Soup & Grilled Cheese w/a Twist

Tortilla Soup

I’ve been wanting to make tortilla soup for a while, but all recipes I’ve found have so many ingredients that it’s overwhelming. Instead, I tried to make it my own way using things I already had and it turned out so great, that I’ve had it twice since! I LOVE this one! The picture really doesn’t do it justice. It’s SO so easy yet extremely satisfying 🙂

  1. Heat 1 serving of Organic Tomato and Roasted Red Pepper soup (Trader Joes)
  2. Stir in 1 cube of frozen cilantro (comes in a pack of 20 cubes at Trader Joes for under $2)
  3. Crush up a handful of tortilla chips and stir in
  4. Grate cheddar cheese on top

Grilled Cheese With a Twist

When I made the tortilla soup the second time, my roommate told me I HAD to have grilled cheese with it. As usual, I wanted to spice it up a little. Instead of just cheese and butter, I used mayo, dijon, and pesto as spreads and added sliced tomato as well. This went fabulously with the tomato soup!
